I had been craving salsa for about two weeks when I saw that tomatoes were on sale at one of the grocery stores. What luck! All those yummy ingredients from Friday were put to good use and became the best salsa ever:) I have no photos to share because hubby hijacked my camera and took it with him to work, but here is the recipe.
Andrea’s Fresh Salsa
-3 lg. or 4 med tomatoes chopped
-1/2 onion chopped
-2-4 jalapeno peppers chopped (depending on how hot you like it)
-1/2 c cilantro chopped
-2 cloves garlic chopped
-1 bell pepper chopped (of whatever variety you have in your fridge we use red/orange)
-1 t salt
-2 t lime juice
Mix all ingredients together in a bowl and chill covered in the fridge for about 2 hours or however long you can stand to wait for it. I tried mine before I put it in the fridge to percolate and it was yummy then:) Enjoy with tortilla chips, family, and friends.
